Ingredients
For the sausage and peppers:
- 1 tablespoon olive oil
- 1 pound hot or sweet Italian sausage casings removed
- 1 large onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
For the drunken noodles:
- 8 ounces pappardelle noodles or other wide egg noodles
- ½ cup dry white wine
- 1 (14.5-ounce) can of diced tomatoes, undrained
- ¼ cup chopped fresh basil
- ¼ cup grated Parmesan cheese
- Freshly ground black pepper to taste
Instructions
-
Cook the sausage and peppers: Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease from the skillet.
-
Sauté the onions and peppers: Add the onion to the skillet and cook until softened about 5 minutes. Add the red and yellow bell peppers and cook for 5 minutes until the vegetables are tender-crisp. Stir in the Italian seasoning and red pepper flakes (if using). Season with salt and freshly ground black pepper to taste.
-
While the vegetables are cooking, cook the noodles according to package directions. Drain the noodles, reserving about ½ cup of the pasta water.
-
Assemble the drunken noodles: Return the cooked sausage and peppers to the skillet or Dutch oven. Add the cooked noodles, white wine, diced tomatoes with their juices, and reserved pasta water. Bring to a simmer and cook for 2-3 minutes until the sauce has thickened slightly and the flavours have melded.
-
Stir in the chopped fresh basil and grated Parmesan cheese. Season with additional black pepper to taste.
-
Serve immediately and enjoy!
