Cod Tomato & Black Olive Stew
A lovely one to enjoy in the sunshine
Ingredients (serves 2)
- 2 tablespoon olive oil, plus extra to serve
- 2 shallots, roughly chopped
- 3 garlic cloves, sliced
- 2 cod fillets (or any other white fish, like monkfish)
- 1 x 400g tin of quality chopped tomatoes @mutti
- 75g black olives, roughly chopped
A handful of fresh basil leaves - A bunch of fresh parsley (roughly 10g), roughly chopped
- 1 lemon

- Boiled or crispy potatoes
- Bread of choice
Direction
- Heat the oil in a frying pan over medium heat. Once hot, add the shallots and cook for 5-6 minutes or until starting to turn golden, stirring often, then add the crushed garlic and cook for 1 minute.
- Pour in the chopped tomatoes, olives, basil, most of the parsley, and a good pinch of flaky sea salt and stir.
- Nestle the fish into the sauce and sprinkle over a pinch of salt and cracked black pepper.
- Cover with a lid and simmer for 7-8 minutes or until the fish is fully cooked through - you could even bake this in the oven at 180C for a similar time.
- Serve the stew in bowls; add a good squeeze of lemon and the remaining parsley.
