Ingredients (serves 4)
- 1 knob of butter
- 2 leeks, sliced
- 1 medium potato, peeled and diced
- 800ml veg stock
- 1 head of broccoli, sliced into florets
- 140g Stilton or any other blue cheese, roughly sliced
- 3 slices of bread, roughly broken into large chunks
Making
- Melt the butter in a wide, heavy-based saucepan over a medium-low heat. Add the leeks and cook for 4-5 minutes, stirring often.
- Stir in the potatoes. Pour in the veg stock, cover with a lid and bring to a boil. Lower to a simmer and cook for 12-15 minutes.
- Add the broccoli and cook for 5-6 minutes until all the veg has softened.
- Remove from the heat, then blend using a hand blender. Add more stock if you prefer a looser consistency. Season with salt to taste and lots of cracked black pepper.
- Arrange the bread onto a grill rack and top each slice generously with the cheese. Grill for 30 seconds min or until the cheese is starting to melt.
- Serve the soup in bowls, and plonk on those cheesy croutons. Extra black pepper to finish.
